Miso Glazed Salmon w/ Broccoli Rice Pilaf


Ingredients (1 portion)

  • 1 Salmon fillet (6oz)
  • 1 T brown sugar
  • 1/2 T hot water
  • 1/2 T miso paste (I used white)
  • 1 T soy sauce (low-sodium)
  • pepper



Directions:
  • Whisk marinade ingredients together
  • Make sure your piece of salmon is dry by patting it with a paper towel
  • grind some pepper on each side of the salmon
  • spray a piece of foil and place over a baking sheet, add salmon and spoon the marinade on top of the fish
  • broil for 6-10 minutes

Sweet Potato Casserole



Ingredients: serves 6-8


2 pounds sweet potatoes, peeled and cubed
2 tablespoons brown sugar
2 tablespoons maple syrup
1/3 cup half-and-half
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 tablespoons butter 
  1. Peel and cut the sweet potatoes into 1 1/2 inch cubes. Add to a pot with cold water, then bring to a boil. Cook until potatoes are fork tender, about 20-30 minutes, then drain.
  2. Preheat oven to 375 degrees F.
  3. Add sweet potatoes and all the remaining ingredients – sugar, syrup, cream, vanilla extract, spices, salt, and butter.  Mix on low speed w/ electric mixer until combined about 30 seconds. Mix on medium speed for another 1-2 minutes, until potatoes are whipped. Spread in a well greased oven-safe pan or dish
Crumb Topping



1/2 cup chopped
1 1/2 tablespoons brown sugar
1 tablespoon flour
1/4 cup old-fashioned oats
1/2 teaspoon cinnamon
pinch of nutmeg
pinch of salt
2 tablespoons butter, softened  
Combine oats, flour, pecans, spices and salt in a bowl and mix to thoroughly combine. Add in softened butter and use your hands to completely moisten the mixture and clump it together. 

Bake 350-375 for 20-20 minutes.
