Corn Salad w/ Balsamic Vinaigrette and Sauteed Garlic Shrimp








 Ingredients: Corn Salad (Serves 4)
  • 4-5 Ears of Corn 
  • 1 Zucchini (chopped)
  • 1/2 Cucumber (chopped)
  • 1/2 Red Onion (diced)
  • 1/2 pint of Cherry Tomatoes (halved)
  • 1/4-1/2 pound Mozzarella (diced) 


Balsamic Vinaigrette (whisk to combine)
  • 4 Tb balsamic vinegar
  • 1/4-1/2 cup olive oil
  • s/p

Balsamic + Garlic Marinated Pork Tenderloin

Ingredients:
1 Pork Tenderloin (1-1.25 pounds)
1 Tb balsamic vinegar
1 Tb olive oil
1 tsp salt
1/2 tsp pepper
2 cloves garlic (minced)

1 Tb oil (for searing)






Directions:
1) Mix marinated ingredients together and spoon over pork
2) Place in refrigerator for 8-24 hrs (longer the better)
3) Take out pork and and sear 4-8 minutes over stovetop until browned on all sides
4) Place in 400 degree oven for 20 or so minutes until nice and browned
